Pumpkins - nutritional benefits + cooking

Please do not over dose on pumpkin/pumpkin seeds! Everything in moderation. This video is meant to be educational and hopefully teach you something that you didn't already know about pumpkins. And sorry, I don't measure...i just add ingredients as i see fit. I FORGOT TO MENTION: I peeled the skin of the pumpkin (before cubing it) with a regular fruit peeler. Much easier than using a knife! PUMPKIN SOUP: Cube the pumpkin + onions. Toss w olive oil and roast in the oven for 40 min at 450 degrees. Take it out and blend (i used a magic bullet bc that's all i have). Simmer on the stove top with some water (or chicken stock or anything else that you like). ROASTED PUMPKIN: Cube the pumpkin. Toss with olive oil, some salt, some pepper. Roast in oven for about 40 min at 450 degrees. Take out and cool.
